Fix PyPI publish action for uppercase repo names 

Disable attestations to avoid Docker image reference error caused by
uppercase letters in repository name (CoplayDev/unity-mcp). Docker
requires lowercase image references.

The trusted publishing (OIDC) already provides supply chain security.
